This coffee is produced by selected smallholder farms in the Popayán region of Colombia. Growers deliver their harvest in dry parchment, which is then milled in Popayán before the green coffee is transported to Caldas for decaffeination.
Colombia is known for its unique sugar-cane decaf method, a natural process developed in-country. The beans are gently steamed to open their pores, then soaked in a solution of water and ethyl acetate derived from fermented sugar cane. This natural compound bonds with the caffeine and removes it while allowing the beans’ original flavour, aroma, and structure to remain intact. Afterwards, the coffee is rinsed, dried, and polished, resulting in a decaf with notable sweetness and a cup profile that stays remarkably true to its origin.
Thanks to this gentle approach, the decaffeinated lot maintains the balanced character and clean sweetness that Popayán coffees are known for.
