Washed Bourbon Aruzi

Javier had the fortune of discovering the Bourbon Aruzi on his farm, Buena Vista, located at 1600 to 1700 meters above sea level. He noticed coffee trees that looked different from the variety he was normally cultivating. Not only did they look different, but they also had higher yields and seemed more resistant. He decided to reproduce the seeds to cultivate more of this unidentified variety. The seeds were then studied in a laboratory in London, where it was found to share similar genetics and phenotype as the Bourbon Aruzi, a variety grown in Ethiopia.
This lot was harvested with strict ripeness criteria, floated, and hand-sorted to remove any defects. The cherries were then fermented underwater for 30 hours. The parchment was washed after careful depulping and dried in temperature-controlled conditions until ideal moisture was achieved.
