For his second farm, the French agronomist Arnaud Causse planted a forest in the middle of a desert on the Andes slopes. 25 different tree species for biodiversity and shade, beehives and many honey plants for good pollination, and leguminous plants which enrich the soil with nitrogen. He then planted his coffee trees in this forest, allowing him to grow this coffee with 0 pesticides. After harvest, the cherries are kept in airtight barrels for 2-3 days of cool anaerobic fermentation, then partially de-pulped and dried on African beds for 2 to 3 weeks. A sweet nougat nuttiness and notes of fresh figs with a chamomile infusion florality. High sweetness and medium acidity.
