Born and raised among coffee trees, Raquel Ribeiro Aguiar inherited of the Cerrado Grande farm from her father. Challenged at first by her new responsibilities, Raquel received support from the entire team of the farm. She gradually gained confidence to improve operational processes and shift the focus to the production of specialty grade coffee.
The lot we selected comes from the Mundo Novo varietal. It is the result of a natural cross between Bourbon and Typica, discovered in 1943 in Brazil. It has a commercial importance mainly in Brazil, and other South American countries. The plant is characterized by its tall stature. It is vigorous and generate good yields for a traditional American native variety.
The lower growing altitude and the natural process result in a coffee with delicate acidity, and is dominated by milk chocolate and nougat flavor. The aftertaste is long and reminiscing of a chocolate covered caramel candy.
We recommend using this coffee for espresso based milk drinks or for a richer batch brew with a more « classic » profile.
